What is natural wine? While there’s no strict definition, it generally follows a few key principles. The grapes must be organically grown, without synthetic chemicals in the vineyard. In the winery, intervention is kept to a minimum—fermentation relies on native yeasts rather than commercial ones, and nothing is added or removed, such as acid or water. Natural wines are usually unfiltered and unfined, or only lightly processed, with little to no added sulphites to maintain their purity.
